Gingered Squash and Pear Soup
AND THIS MONTH, WHY DON'T YOU...
Carry a stash of candy corn for snacking--decadent and delicious!
Try a sweet dash of cinnamon in your savory chili * Take a night
off and serve cereal for dinner * Stock up on marshmallows --
you can never have enough ( think hot chocolate) * Bake an apple
pie to fill the house with that yummy smell * Brew ginger tea...
it really works well on tummy aches.
Take a few minutes to welcome fall with a bowl of this yummy recipe for butternut squash soup.
Saute' I chopped onion and 1 Tbsp. grated ginger in a little oil in a large pot until onion is tender. Add 1 large butternut squash, pealed, seeded and cut in chunks; 2 ripe pears, peeled cored and chopped; 4 cups chicken broth and salt and pepper to taste. Bring to a boil; cover. and reduce heat and simmer 15 minutes until squash is tender. Cool slightly. then puree' until smooth. Garnish with sour cream and toasted pumpkin seeds. Makes 8 cups. Enjoy!
